The Pisco sour is a pisco-based sour (cocktail) whose invention is attributed to Victor Morris, an American immigrant from Salt Lake City who moved to Perù in 1913. After an initial period working for the Cerro de Pasco Railroad Victor opened the Morris Bar in downtown Lima, which quickly became a meeting place for Peruvian upper-class and English-speaking immigrants.

Morris began serving Pisco Sour in his bar as an alternative to Whiskey Sour

 and the cocktail continued to remain popular even after Morris died in 1929. 

Although its origin is disputed by Chile, it is therefore evident that the cocktail originated in Peru.
Pisco Sour is also the national drink of Peru where a national holiday is even celebrated on the first Saturday of February.

pisco-sourAll Day Cocktail

  • 4.5 cl Pisco
  • 3 cl Fresh lemon juice
  • 2 cl Sugar syrup
  • 1 raw egg white (small egg)

Shake and strain into a chilled champagne flute.
Dash some Angostura bitters on top.

I disagree on the champagne flute glass or cocktail glass, I prefer a low or (old fashioned) tumbler
